Brandii's Lasagna - you don't have to precook the noodles!

1 lb ground beef
1/2 cup onions
1 clove garlic
1 bottle spaghetti sauce
3/4 cup water
1 box of lasagna noodles
Large container sour cream
1/2 cup parmesan
3 cups mozzarella

Preheat oven to 375

9x13 pan

1st layer - sauce and beef mixture
2nd layer - lasagna noodles
3rd layer - mixture of cottage cheese, 1/2 of parm and all of mozzarella
Repeat
Top layer should be sauce

Cover with foil, bake 1 hour. Uncover, cook 5-10 minutes, sprinkle with the rest of the parmesan cheese and serve.

Honey baked lentils

Honey baked lentils.

1 cup lentils
2 cups water
2 tbsp honey
2 tbsp soy sauce
2 tbsp olive oil
1/2 tsp ginger (ground)
1 clove garlic
1 small onion ( I like to saute them in a little olive oil first, but you don't need to)
salt & pepper

Bake in a covered dish at 350 until tender (about an hour and a half). You can also saute and throw in veggies, or sub in a bit of rice for some of the lentils. It's very adaptable.

WW Chicken Cheese Casserole (158634)

6 pts/serving - makes 8 servings.

2 cups cooked macaroni
2 cups chicken, chopped
2 cups cream of mushroom soup, undiluted
2 cups skim milk
8 ounces low-fat cheddar cheese

Preheat oven to 350 degrees.
In a large casserole, combine all ingredients, mixing well.
Bake,covered, 35-45 minutes.
Remove cover; bake 10-15 minutes longer.
Serve immediately.

WW Mexican Chicken Breasts

4 pts/breast

1 (1 1/4 ounce) package taco seasoning
16 ounces boneless skinless chicken breasts
1 cup salsa
1/4 cup fat free sour cream


Place chicken breasts and taco seasoning in a seal able plastic bag; shake to coat well.
Spray casserole dish with Pam.
Place breasts in casserole.
Bake 30 minutes at 375 degrees.
Top with salsa about 5 minutes before breasts are done.
Top with sour cream before serving.

WW BLT Pasta Salad - 3 pts (154715)

3 pts/1 cup serving

3 2/3 cups cooked large macaroni shells
4 cups tomatoes, cut up
4 slices bacon, cooked and crumbled
3 cups of thin sliced lettuce
1 teaspoon sugar
2 teaspoons cider vinegar
1/2 cup fat-free mayonnaise
1/3 cup light sour cream
1 tablespoon Dijon mustard
salt and pepper

In a large bowl mix together shell, bacon, tomatoes, and lettuce.
In a small bowl mix the sugar, vinegar, mayo, sour cream and mustard, salt and pepper to taste.
Pour over shell mixture, stir and serve.

WW Pumpkin Muffins - 2 pts a piece (145312)

1 (18 ounce) box spice cake mix
15 ounces pumpkin
1 cup water

Mix all ingredients in mixer.
makes 24 muffins.
cook for 20-25min at 350 degrees.
They will be very moist.

WW Tortilla Soup - 0 pts (152207)

1 cup onions, chopped
2 garlic cloves, chopped
3 green onions, chopped
2 (12 ounce) cans diced tomatoes
4 cups low-fat chicken broth
1/3 cup salsa
1/2 red pepper, chopped
1/2 green pepper, chopped
3-4 celery ribs, chopped
1/3 cup fresh cilantro
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon basil
4 tablespoons fat free sour cream
4 tablespoons flour, to thicken (I only use 1 because I don't like thick soup)

Simmer onions, garlic & green onions in a pan until tender. Put all ingredients in a pot, simmer until all veggies are tender.
**** You can add chicken, divide the points by 9 servings. Taste great with a couple toasted taco shells on the side, but count your points -- .
